Bottling Butter

Who doesn't love butter?

I think butter was one of the BEST inventions EVER!! It's so creamy, yellow, soft, delicious, and beautiful! We couldn't make cookies, cakes, ice cream, frosting, and so many other wonderfully tasty things!

So when I heard we were going to have an Enrichment Activity to teach us how to bottle butter....well....I had to be there!!! I wouldn't want to be in the middle of a catastrophe and not have my scrumptious little friend. That really would be a horrible situation indeed! :P


I love when others impart their wisdom with me, so I will of course share what I learned with you!!

Real butter is of course the Best, but margarine works too.

You will need:

2 pint jars (1/2 pint works too, and may be better so you don't have to use so much butter at once after you open your jars..for this recipe it refers to 1 pint jars, so adjust your butter needs according to jar size.)

8 sticks of butter (2 boxes)

Pan to melt butter

Pan to boil lids

Spoon

Tongs

Pan to place jars on in the oven

Heat pint jars in the oven @ 250 degrees for 20 minutes on a pan. (If you put them in before you start your butter they will be done at the same time.) Slowly stir and melt the butter in a pan on medium heat. After it has boiled for 5 minutes, stir "again", and then pour butter into the hot jars from the oven. (It's important to give it a last stir before pouring into jars so the butter doesn't separate.) Leave about 1/2 inch space at the top of the jars. Using a funnel to keep butter off the rims is helpful.

Clean the tops of the jars with a cloth and put on the hot, dry, lids and rings. Tighten securely. Wait 10-15 min. after the lids "plunk"....and begin shaking the jars every few minutes. While still slightly warm, put the jars in the refrigerator. Check every 5 min., shaking the jars each time. Eventually the butter will harden. Leave in refrigerator for 1 more hr.



Bottled butter can store on your shelf for at least 3 years if kept in a cool, dark place!!

Eli's 6th Birthday Party

Eli Harrison Kitch, is my second born son. He came into the world on April 14th, 2003, at a WHOPPING 9lbs. 3oz!!! It was a surprise to me and the Doctor! :)


Eli is my big teddy bear. He looks big and tough on the outside, but inside he's a softy. He has a heart of gold and he's very protective of his family and friends.

Eli is a straight "A" student, and he loves games to no end. He's always up for any game, anytime, any place, anywhere! He's always looking for fun. He loves to play T-Ball ..... and he's pretty good at it! :)

I feel blessed to have him as my son. He's taught me so much in his 6 whole years...the biggest of which has been patience and selflessness. Thank you son!

Eli's Birthday Party:

For Eli's bday he chose to pick a few of his best buddies from school and go bowling. (Told you he loves games!) :P We went to the Brunswick Zone in Mesa and had a blast!

Ok...I don't remember ever seeing these "ramp" things when I was a kid when we went bowling. But they are pretty smooth! You line up the ramp, load your ball, give it a push, and voila! Definitely helpful by the end of 2 hrs. of swinging a 6lb. ball when you're a kid. :)

It was a pretty nice set-up at the bowling alley. They provided everything I could have though of! We'll definitely go back again....maybe even in July for Walker's bday. :)

We decided to do cake and ice cream back at the house so I wouldn't have to transport it. The kids played out back for a while...you can see Sammy trying to get into the action!



For as long as I can remember, Eli has always loved pirates. So for his bday cake he of course asked for a pirate cake. This is what I came up with to make for him. He told me, "This is the coolest cake I've ever seen mom!" Another example of his heart of gold!

It was a fun day full of friends, family, and fun. I think he will remember this one for quite some time!

Daddy's Girl

As a Mom of 3 it's easy to get caught up in the everyday hustle and bustle of daily routines. After all there is piano, basketball, cub scouts, t-ball, homework, cleaning, cooking, laundry, church...you get the idea.

But inbetween those activites there are "Moments".....these moments make you remember why you are here. Why you do all that you do for your family. The picture taken here was a reminder to me yesterday at Eli's T-Ball game. A very unexpected place to have been given such a treasure!!

Photo Editing

I just wanted to show how much photo editing can make or break a photo. Yesterday was Easter and like 99% of you I was snapping away trying to capture the day with my camera. The problem was....I hit the white balance button by mistake when I was trying to hit the ISO and well...I was really irritated at most of my pics. I couldn't figure out at the time what was going on with the camera, every thing was BLUE!!!! By the time I got home I had figured it out..but it was too late. :(

BUT...I didn't let it get me down. I took them off my camera and opened up photoshop..and well, I'm pleased to say that the once ugly, unusable, annoying pictures actually turned out pretty great! The moral of this story...NEVER delete any picture, you can almost always salvage it through photo editing!!!!

Egg-citing!!

My kids are growing.....
I was all excited to dye Easter Eggs with the kids and I could only get Eli and Alayna to do them with me. Actually, let me correct myself....

I was able to get Eli to dye this "one" egg...Walker was too busy playing video games.

This is why we have Alayna. :P She was soooo "egg-cited" to decorate Easter Eggs. It made it all worth it. :D Thanks Laney Bug!

As you can see her and her Daddy were having a ball!

She's sitting so proudly with her fine egg dying master pieces!



Nice work baby girl. Thanks for indulging your Mom in a fun tradition. Even if those "old" brothers wouldn't. :)

Disneyland!!!

If you know me, you know I LOVE Disneyland. There are so many reasons why I love vacationing there. First of all I love that the whole family enjoys it. It's a vacation I know everyone will get to do something they like. I don't have to plan every activity and that's a big bonus for me. I don't have to cook or clean up after anyone either. All we have to do is pack and show up. That is a TRUE vacation for this mom! :P

But more than just the ease of Disney...it's the "Magic" of Disney. I love all the attention to detail and the theming. No one does it like Disney!!! :)

So let's get on with it shall we? This trip was very last minute. I think we decided on Thursday to leave Saturday. With it being Spring Break in California rooms were limited, but we were able to find one. We drove, which we haven't done in a long time...and the first road trip Alayna has ever taken. I was nervous about her, but she was really good about it! It really can make or break a trip if your kids are throwing fits the whole time..lucky for us that was not the case.

We got into town and to Disneyland around 6pm. We of course took the tram over to the park and Alayna thought the "Choo-Choo" was tons of fun. She was a little upset she couldn't ride it again especially since..........

"Someone" not naming names...forgot the tickets in the van and the guys had to go back and get them. :)

We got our tickets and our friendly Cast Member greeted us.


A nice couple offered to take our picture if we took one of them. Thanks friendly people!


We then headed over to Sleeping Beauty's castle. Alayna was sooo excited to be there she had to "jump" for joy!

Her first choice was King Aurthur's Carousel. The boys obliged...but wasn't their first pick.


They are such good brothers to let her choose first!

This picture came out a bit dark..the flash just wouldn't go that far and I tried every setting and still had no luck ....oh well. Jared had promised the kids the next time we went to Disney he would let them go on Tea Cups and go as fast as he could possibly spin them.....Alayna wishes she would have understood what this meant before getting on with those crazy guys!!

After a late night we got up early to head back over for some more "Magic". Looks like Jared is trying to get in a quick nap before he can handle any more fun. :P What a good sport!

Walker and Eli wanted to go to Disney California Adventure first.(DCA for you Disney fans out there..Jared teases me incessantly for using acronyms at Disney). Since they were so nice to Alayna the night before, we were more than happy to let them choose.


Last year when we came this ride was "about" to open. So the boys have been dying since last year to ride "Toy Story Mania". They thought it was worth the wait. They said it was their favorite ride! The line was pretty long for it though..

This picture was taken at the end of the ride. You might think her glasses just fit that way..but you would be mistaken. The ride sorta whips you around a lot!!! Poor kid probably had a mild case of whiplash! :P


Disneyland isn't "always" the Happiest Place on Earth! But Eli was trying to console his sister.


On our way over to Bug's Life Land..we spotted the stick bug from the movie..we had to pose with him. :)

Heimlich's Chew Chew train is a cute little ride. The kids love how you can smell the different foods!

Cafe Orleans has great food. They have a basket of fries called "Pommes Frites". It's to die for!!! You must try them the next time you go! Soooo worth it!!!!!

Haunted Mansion has always been Walker's favorite ride. We decided to pose together..however, he's not looking so happy here??

Part of the reason we came on this trip was to celebrate Eli's 6th bday this mo. and Walker's 9th bday in July. Here is my handsome Eli...Happy Birthday Buddy!

Eli's favorite ride has always been Pirates of the Caribbean...can you tell? :)

Jared loves Dole Whips, so we made sure he got one. The boys thought the Totem Poles were cool.


Our last experience was Turtle Talk with Crush. If you haven't ever gone to that attraction try to. It's really cute...and air conditioned! :D
